Salmon Parcels

A tasty superfood supper

This is a delicious dinner which is quick and simple to make. It is perfect for exam-time. Not only can you just throw together all of the ingredients and leave to bake whilst you memorise those formulae or dates, but salmon is rich in omega 3 oils, which help brain functioning! This dinner is the epitome of healthy eating (tell your mum about it next time you phone home for extra brownie points!): experts recommend a portion of oily fish a week, and this also provides two of your five (or seven!) a day. Serve with green vegetables and a baked sweet potato, noodles or rice.

2 Salmon fillets

1 small red onion, finely chopped

400g tin chickpeas, drained

½ red pepper, finely chopped

1 clove garlic, crushed

1 red chilli, de-seeded and finely chopped

1tbsp honey

1tsp lemongrass

1. Preheat oven to 190oC

2. Mix all ingredients, except the salmon, together

3. Cut two squares of tinfoil and place on a baking tray

4. Dollop the chickpea mixture into the centre of the tinfoil squares

5. Place the salmon on top, season with salt and pepper and drizzle over any remaining liquid from the chickpea mix

6. Pull the sides of the tinfoil up around the salmon, but don’t seal the parcel; this will allow the steam to escape

7. Bake in the oven for 15–20 minutes

If you are only cooking for one, the mixture can be divided into two and kept, as well as the salmon, in the fridge for up to three days to use for another dinner.
