#HealthyTreats: Nice cream

It’s almost too good to be true… but it isn’t. If you want something healthy, delicious, fun and easy to whip up (and that actually tastes like ice cream), this healthy ice cream series—‘Nice cream’ is for you. Below are four fruity flavour combinations with no dairy or added sugar to choose from. Just fabulous. Do it!

Note: For nice creams with bananas, it’s best to eat it straight away after you make it as otherwise it can go a bit brown.

Apple & banana

Ingredients: (Serves 1)

  • 1 large banana
  • Half an apple, peeled

Method:

  • Peel the banana and chop it into little discs
  • Chop the apple into small chunks
  • Bung onto a plate with some baking paper (it stops it sticking to the plate) and freeze for approx. 10 hours (or until it’s frozen absolutely solid)
  • Pop it all in a blender and whizz until smooth (you may need to scrape down the sides with a fork or something a couple of times)
  • Serve immediately or freeze in pots (but be aware this makes it solid and not the gelato soft-serve you get when you eat it straight away)

Peach & blueberry

Ingredients: (Serves 1 – if you want more, double up the ingredients)

  • 1 peach
  • 1 large handful of blueberries

Method:

  • Cut the peach into slices (no need to skin it but do remove the stone)
  • Pop the peach and the blueberries on a plate with some baking paper and freeze overnight
  • Bung the frozen fruit into a blender and whizz until it’s gone smooth (you’ll need to use a fork to push the mix down the sides of the blender)
  • Eat!

Strawberry & banana

Ingredients: (Serves 1–2)

  • 2 bananas
  • 5 strawberries

Method:

  • Peel the bananas and cut them up
  • Hull (i.e cut the green bit off) the strawberries and cut them into halves
  • Pop it all on some baking paper on a plate then freeze (overnight works great)
  • When you want to make the ice cream, blitz everything in a blender until it’s super smooth (you will probably need to poke a fork in and scrape the fruit down towards the cutty bit of the blender a couple of times)
  • Serve immediately or pop in a pot, cover and freeze (again, be aware that this makes it go hard and it will not be the soft gorgeous stuff you get when you eat it immediately)

Apple, peach & banana

Ingredients: (Serves 1)

  • 1 peach
  • 1 apple
  • 1 banana (small or half a large, as we don’t want to overpower the taste)

Method:

  • Cut the peach, apple and banana into slices then put onto a plate with some baking paper
  • Freeze overnight
  • Blend in a blender when it’s frozen solid (it’s quite stubborn so you’ll need to keep scraping it down with a fork)
  • Enjoy!
